Most kids (and adults) are happy to sit down to some mac and cheese. No reason you can’t! I like to add lots of veggie sides to go along with it, that way you don’t lose the integrity of the dish.

Here’s the recipe:

What you need:

  • 2.5 cups elbow macaroni (uncooked)
  • 1/4 cup milk
  • 2 tbsp cream
  • 1 tsp garlic, 1/4 tsp smoked paprika, cracked pepper
  • Two slices cheddar cheese
  • 1 cup mozzarella cheese
  • 1/4 cup Parmesan cheese

What to do:

  1. Preheat the oven to 420F
  2. Cook pasta according to directions (minus 2-3 minutes of cook time because it’ll cook more in the oven)
  3. Mix the mozzarella and Parmesan into the cream, milk, and spices
  4. Once the pasta is done, drain it and pour into an oven-safe dish. Mix in the milk and cheese mixture
  5. Lay the two slices of cheese side by side over the top of the mixture
  6. Cover with foil and place in the over for 10-15 minutes
  7. Next, remove the foil and place under the broiler for 1-5 minutes (depending on your broiler!) until the top is nicely browned
  8. Serve alongside some veggies, a salad, or something similar
